The Cuisine

La Gargotta has a traditional cuisine with great attention to the quality and freshness of the ingredients. For this reason we use seasonal products coming mainly from our territory. Chef Agim prepares traditional dishes as well as recipes revisited respecting the taste and the original recipe. In addition to the famous Florentine Steak there are other “cult” dishes such as The Gnudi, The Peposo alla Fornacina, The Florentine Trippa,  The Pappardelle with Hare sauce or Boiled redone with onions

The historian Pellegrino Artusi, a famous culinary critic, describes the Florentine steak as “(…) is nothing more than a chop with his bone, coarse a finger or a finger and a half, cut from the loin of veal.”
